Stamagathi has been known both as food and herb since the ancient times. Very few people could get it, as it grows in very rough and dangerous areas, so it became very valuable. Since 1920 the first attempts of its cultivation have been made. Its taste is bitter and the Cretans always accompany it with virgin olive oil. It is consumed raw, in salad or boiled.
