“Mastelo” Soft cheese of ChiosIt is a soft cheese that has been exclusively manufactured in Chios island since 1994 with high quality local milk. Its name ’Mastelo’ comes from the Venetian word mastelo used for the wooden bucket in which milk was collected. At first Mastelo was made only with cow’s milk. Few years later was produced with goat’s milk. Its taste is salty and is served grilled.
